Pot Of Gold Cupcakes


There is a lot of uncertainty in the world right now, however I think the ties that binds us all together are cooking and community. I don't know about you, but I'm doing a lot of extra cooking, being at home all day. I'm doing my best to share that cooking and baking with those who either can't leave home due to self-isolation, or with those that are susceptible. Now is the time to help our families, neighbours and communities. Every bit makes a difference.


Cooking is something that creates something from nothing. Isolated ingredients blend and weave together to make something fabulous. With more family time than perhaps planned, why not be intentional...get the kids involved in the cooking and together make something fun for the whole family or those around you to enjoy.


Because, who wouldn't love a few cupcakes left on their doorstep?

Even though St Patrick's Day was yesterday, I still think this is a fabulous project to make with kids. There are a number of different versions of the "rainbow" cupcake on Pinterest. I loved this particular one, as it feels like part cooking and part crafting. You get to bake, but you also get to paint. How can you go wrong with that?

Pot Of Gold Cupcakes (from Bake A Moment)


Ingredients

1 recipe for your favourite chocolate cupcakes (my easy favourite is here, or use 1 box mix)


1 recipe for your favourite chocolate cupcakes (my favourite is from fellow Canadian, The Kitchen Magpie here, however I use skim milk instead of cream as she calls for)


1 pastry bag (or zip top bag)

1 medium star pastry tip

1 food-safe thin-tip paint brush

gel food colours in red, orange, yellow, green, blue and purple (AmeriColor are my favourite gels)


Method

Bake 12-16 chocolate cupcakes according to directions and let cool to room temperature.


Make one recipe of vanilla buttercream icing.


To Decorate:

Cut tip off of a pastry bag (or zip top bag) and push star tip down the inside of the bag until it fits snug. Stand bag upright in a tall glass.


Using a clean paint brush, paint six coloured stripes going up the length of the bag. For best colour blending, paint stripes in rainbow order listed in the Ingredients section above (red, then orange, then yellow, etc.). Make sure to clean paint brush in between colours.

Using a spoon, gently fill pastry bag with buttercream icing, trying not to smudge painted stripe gel colours as you fill. Once filled, twist the open end of the pastry bag to take air out of the bag and compress the buttercream icing for easier piping.

Do a practice circular swirl and see the colours mix!

Note: The rainbow icing colours will start out very vibrant, however the more cupcakes you ice, the more the colours fade as the gel colour stripes inside the piping bag are used. Below image is the first four cupcakes piped with rainbow icing. The colour softens with each cupcake after.

Continue to pipe rainbow swirls on all cupcakes. Discard pastry bag (or wash if re-useable) after piping is completed.


Top each cupcake with one chocolate gold coin.
